  1. Rinse Poha in a colander under running water. Set aside to drain.
  2. Heat oil in a pan. Add mustard seeds and let them splutter.
  3. Add peanuts and sauté until they are golden brown.
  4. Add chopped onions and green chilies. Sauté until onions are translucent.
  5. Add chopped potatoes (if using) and green peas. Cook until they are tender.
  6. Add turmeric powder and salt. Mix well.
  7. Add the rinsed Poha to the pan. Mix gently to combine all the ingredients.
